All phases of coffee production for this coffee, from the selection of seedlings, management of shrubs and trees until harvest and processing, are executed with commitment and care.
There is an active tree planting initiative to repopulate native species in order to preserve heirloom varietals and biodiversity. Due to the steep topography, most tasks on the farm, such as planting and harvesting, are performed manually without the aid of mechanization. Wastewater is fully treated to avoid polluting the stream which runs across the farm. 
The farm, Cachoeira da Grama, has been in the Carvalho Dias family since 1890 and some of the original Bourbon varietal trees are over 107 years.
We sourced this coffee directly from the producer, Gabriel de Carvalho Dias.
